The Perfect Hot Chocolate

"Drink hot chocolate on a cold day, it's always going to taste better," advised renowned chocolatier Jacques Torres, when asked recently to share tips on how to make perfect hot chocolate. Coming from Mr. Chocolate himself, it's not exactly a tough sell — this being, after all, a subject the man knows very well.


Use Real Chocolate
On this point, Mr. Torres is firm and adamant. He recommends using real, high-quality chocolate that has been conched for a long time (a finishing process by which unpleasant flavors and acidity are removed). Mr. Klug, too, is quick to state that using the best quality chocolate is of the utmost importance. To him, that means using premium cocoa beans that have been perfectly fermented, roasted, and then finished into a complex dark chocolate. "Most of the chocolate we use is in the mid-60 to 70 percent dark chocolate range," he says, also adding that they favor beans from South and Central America, as well as the Caribbean and Madagascar.



Go with Shaved Chocolate for Best Consistency
"Cocoa powder alone," Mr. Klug says, "falls short and can leave a grainy texture in the mouth." He notes that shaved chocolate melts more quickly in hot milk, allowing for a better and smoother incorporation of ingredients. It's a point that also falls in line with Mr. Torres' hot chocolate-making philosophy. Mr. Campbell, for his part, opts for using both and combining a small amount of high-quality cocoa powder with the hot milk, then adding more shaved chocolate to that.



In the Battle of Milk vs. Water, Milk Wins
No watered-down hot chocolate for these experts — all three prefer using milk. Says Mr. Torres, "I'm a traditional guy, I like to use milk. If I'm going to drink a hot chocolate that I already know has a lot of calories, I'm going to make it damn good. I don't want to spend calories to get fat and not get pleasure out of it!"



Try Using Steamed Milk
Mr. Klug offers an interesting and unique piece of advice when it comes to heating the milk: Steam it. "It brings a much nicer texture to the drink. It's rich but it also feels aerated in a pleasant way."



The Order of Things
To achieve the best consistency, Mr. Torres recommends heating the milk, pouring it over the chocolate, mixing, and then pouring the mixture back into a pot and heating it on the stove until it starts to boil again. "That way you get the bonding that gives it a better, nicer consistency."



Don't Be Afraid to Let It Infuse Overnight
You know how people say soup often tastes better the next day? Well, that philosophy might also be able to be applied to hot chocolate. Mr. Torres says there's nothing wrong with making a batch of hot chocolate, refrigerating it, and reheating it to enjoy it the next day. "It might be better, the flavor is going to infuse. Hot chocolate is darker the next day because it infuses more."



Experiment with Accent Flavors
Want to add an extra flavor to your batch to make it just a touch more special? Mr. Torres recommends adding a pinch of ground ancho chile or chipotle chile. Other flavors he enjoys pairing with chocolate include orange, peanut butter, banana, and caramel.

A Lost Battle With Gluttony










I swear I'm going near any chocolates anymore, not until IDK when. I think I've eaten few years worth of chocolate in this few months alone. This is insane.



Playing Facebook games until past midnight, I reach for the chocolate. Get restless in bed, I reach for chocolate. Whenever I'm on diet, I eat them like no tomorrow. The cravings always crept up at the inappropriate time.




Chocolate do bring benefits to the health but for my case it has past beyond the that. Diabetes and obesity. I don't really want that so soon.I think chocolate is created by Beelzebub to lure the human into committing one of the seven sins, gluttony. Tick mine, I did that too many times that I've lost count. It was a lost battle..

The Ultimate Guide to Starbucks' Secret Menu

Stumbled across this at the Daily Meal

Affogato-Style Frappuccino



This one probably classifies more as an in-the-know drink than a "secret" one. Order any Frappuccino "affogato-style" and you'll get a shot of hot espresso added on top of your drink as opposed to having it blended in.



Super Cream Frappuccino



Like to go heavy on the whipped cream? Ask for a "Super Cream" version of your Frappuccino and you'll get half a cup of whipped cream blended in.

"Short" Drink

The Tall drink's smaller, less expensive younger brother.

Cake Batter Frappuccino

Perhaps a little deceptively named, as there are no actual pieces of cake or cake batter in it, this beverage originally consisted of vanilla and almond syrup added to a Vanilla Bean Crème Frappuccino. However, since the almond syrup is largely no longer available, some recommend that you try subbing in hazelnut syrup and white mocha for a similar flavor.



Chocolate Dalmatian



White Chocolate Mocha with java chips and chocolate chips sprinkled in.

Zebra Mocha

Sometimes also called a "Penguin Mocha," a "Marble Mocha," or simply a "Black and White Mocha," this drink combines the white chocolate mocha with the regular mocha for those who can't pick a favorite. Or, if you really want to take it to the next level, ask to have raspberry flavoring added for something called the "Red Tux" Mocha.

Dirty Chai




A Chai latte (hot or iced) with a shot of espresso added in. And if you want two shots? That's called a "Double Dirty" or "Extra Dirty" Chai.

Green Eye

A Red Eye or Black Eye, sure — that's one and two extra shots of espresso in a regular drip, respectively. But those that go for green get a sure-to-jack-you-up three shots of espresso boost to their cup of coffee. (Note: apparently at some places it's called a Blue Eye.)

Triple C's

And the award for best alliteration in a Starbucks drink name goes to the Three C's: Cinnamon Dolce Latte with caramel syrup and chocolate mocha syrup.

Biscotti Frappuccino

This off-the-menu item sounds a little like a Starbucks version of a DQ Blizzard or a McFlurry, except you have to have to buy a package of biscotti cookies separately and ask your barista to blend them into your Frappe. Note: There seems to be some contention online as to whether or not baristas are actually allowed to put biscotti in the blender, so maybe only ask someone you know who is willing to do you a favor.
